
Valhall is getting on fine now, we have tasted the second trial batch and
it turned out much better than expected. Its got that nice Mediterranean
fruity taste. We have now used figs...Turkish figs from Miklagard ,
Istanbul. We have also used a wild yeast for fermentation, this is one of
the few beers in the world fermented with a single strain of wild yeast .
This is very exciting and we are sure the end result will be worthwhile
waiting for. No beer in the old world would be free from lactic acid,
therefore we now do a sour mash for this beer creating lactic sour taste
the natural way. This beer will be just gorgeous.

Our new project, Valhalla, is a daring experiment. Some people may have
heard about this place, with big feasts and the ale they drank there. I
expect this ale was as fantastic as the place itself. The hall Valhalla
was so great that 800 men could walk side by side through each of the
540 doors, and the ceiling was covered with golden shields. This is the
place where fallen warriors would live forever. They would put on their
armour every morning and go out to fight or enjoy sporting activities.
When they returned in the evening they would eat and drink at the
fantastic feasts of Valhalla.
We have been thinking a lot about how such an ale/mead should taste.
We know from history that the Vikings went on long and frequent sea
voyages, often visiting the Mediterranean. They visited Miklagard
(translating, big city) known today as Istanbul. They also traded and most
likely brought back dried fruits, spices and herbs. Our experiments
include honey, dried fruits and a special wild yeast.
We have set out to try and make an imaginary drink full
of wonderful flavours just like you would imagine it may
have tasted in Valhalla. The colour of this drink should
be golden with a wonderful perfumy, spicy aroma, a
potent drink reminiscent of mead, made with honey, and
sweet fruits of the Mediterranean. So far the first attempts
are promising and we will keep you posted on the progress.
